How's it taste?

Ripe aromas of currants, damson plums and toasted spice. A medium-to-full bodied wine filled with flavours of red berries and plums with underlying spice from the oak. Approachable tannins add length and characteristic regional structure. Ready to enjoy now but will find further complexity over the first five years from vintage.

How was it made?

Ebony is a classic Australian blend of Cabernet Sauvignon and Shiraz produced from both select growers and Deep Woods Estate-grown fruit. 2017 was a vintage of two distinct halves. A mild spring that initially caused some worry for varieties such as Cabernet Sauvignon and Shiraz was offset by a beautifully warm, early Autumn. Despite harvest being some three weeks later than a typical Margaret River season, fruit quality was incredible and the resultant wines are elegant, full of flavour and have lower than average alcohol levels. Winemaking The two varieties were handled separately throughout the winery with a range of winemaking techniques such as open-top fermentation, pre-soaking and post-fermentation maceration used. The philosophy behind Ebony is simple; fruit richness, flavour and soft approachable tannin.

Who made it?

Deep Woods Estate was founded in the northern end of the beautiful Margaret River region of W.A in 1987. It changed hands in 1992 when the Gould family purchased the winery, and was sold again in 2005. Today, it is part of the Fogarty Wine Group (they also own Lakes Folly, Millbrook and Smithbrook wines). The property nests on a ridge overlooking a sea of Jarrah and Marri trees, hence the name Deep Woods. It boasts 16 hectares of sustainably-managed, low-yielding vineyards segregated into 12 blocks planted to Semillon, Sauvignon Blanc, Verdelho, Chardonnay, Merlot, Shiraz, Cabernet Sauvignon and Cabernet Franc. Winemaker Julian Langworthy employs traditional and state-of-the-art techniques to craft small batches of wines of impeccable quality under several different labels. The Deep Woods Reserve label is the ultra-premium range made entirely from estate-grown fruit. The Estate range brings beautiful varietal character and vibrancy while offering excellent value for money, whilst the Ebony, Ivory and Harmony label uses estate and locally sourced fruit. Stylistically they range from complex, zesty, nutty Chardonnays through to cassis and chocolate Cabernet Sauvignons displaying Margaret River typicity.
