Vineyard: This vineyard lies in the heart of the Adelaide Hills on Wenzel Rd south-east of Oakbank. David and Sue Cherry (nee O’Leary) planted this site in 1990. The Adelaide Hills is arguably one of the best regions in Australia for Pinot Noir and Chardonnay. The soil profile is brown loam with limestone and slate schist, contributing to good drainage and moderate vigour. The elevation of this cool climate region consistently offers a natural balanced acidity to this single vineyard wine.
Winemaking: Pinot Noir and Chardonnay is handpicked and whole bunches are gently pressed. A cool controlled ferment over 10 days with 100% malolactic fermentation. Some oak influence results in a textured and complex base. The wine is triaged for a minimum of 2 years and disgorged annually. The time on lees gives delightful autolysis and maturation notes, hallmarks of fine sparkling.
Appearance: Pale straw with a slight pink tinge.
On the nose:Complex and toasty. Strawberry shortbread. Yeast complexity and a beautiful fine bead.
On the palate:Finesse, balanced acidity with a nougat creamy palate and delicate finish.
Cellaring: As this is aged on triaged lees it is ready for consumption immediately post disgorgement.
