Thistledown is a fascinating project label of Giles Cooke MW, working to supply export markets principally with some of the finest Australian red wines.
The Batchelor's Block is seriously fine too. It's a beautifully luscious Barossan red with a more savoury bent too. Heart, but with a clever edge too.

Hand-picked from a single block, wild-fermented with 40% whole bunches, matured for 18 months in French hogsheads (50% new). Deluxe packaging is the start, the vinification precisely reflected on the dark berries of the bouquet and supple, medium-bodied palate. By both whole bunch/berry fermentation and the French oak maturation, tannins are relegated to the sidelines and told to keep quiet. An opulent wine in opulent packaging - no expense spared.'
It's earthen and coal-like with rounds of plum-soaked fruit. Oak adds polish and a creaminess to the texture, but not a lot in flavour terms; thankfully. It's a coherent wine, every aspect on the same page. Tangy, earthen, loganberry-like notes contribute energy and interest. It's a smart wine. Every detail has been examined and then placed with care.'

How was it made?
The first "single site" release and a wine that sets the benchmark for contemporary fine wine from the Barossa. Produced from hand-picked fruit from defined part of one single block in the revered Ebenezer sub-region, Bachelor's Block effortlessly blends precise picking times, whole bunch natural fermentations, gentle vinification with extended time in fine French hogsheads to yield a wine of taut power, finesse and savoury freshness.
Who made it?
From our base in the idyllic Adelaide Hills, we work with pristine fruit sourced from iconic vineyard sites. Giles Cooke MW and Fergal Tynan MW, with the helping hand of Peter Leske, hand-make small-batch wines that illustrate the benefits of great sites and intelligent winemaking. The unique blend of superb fruit sources and experience in both the New and the Old Worlds helps craft wine of subtlety, texture and detail – wines perfectly suited to complement rather than overwhelm fine food.
