French Chablis and Australian Chardonnay

Terroir/soil

Chablis: All of the Chablis Grand and Premier Cru vineyards are planted on Kimmeridgean clays, made up of tiny oyster shells, which impart a distinctively mineral, flinty note to the wines. Other areas, particularly most of the Petit Chablis vineyards, are planted on slightly younger calcerous Portlandian soil.

Adelaide Hills: The soils can be described as a mixture of sandy loams, loams and clay loams over clay subsoils. These vary in structure and it is not unusual to find these soils combined with shale and ironstone.

Winemaking

Chablis: Fruit is picked just ripe, generally fermented in steel and concrete with no intervention to preserve freshness and primary fruit. Some use of oak, primarily on Premier and Grand Crus.

Adelaide Hills: riper grapes and use of oak in winemaking to give texture and depth.

Style

Chablis: fresh, high acidity, clean, pure, intense and with vibrant primary fruit character.

Adelaide Hills: elegant, textured and lean but which have the acid structure to age and evolve. These bright and stylish white wines challenge the traditional assumptions about Chardonnay and rival the very best, with their fruit intensity and complexity.
